If you’re selling hot, prepared food at the market, you may be required to have a HACCP Plan (Hazard Analysis and Critical Control Point). This is a food safety plan that shows how you’ll prevent contamination and keep your food safe during cooking, holding, and serving.

Your HACCP plan must:

  • Identify potential food safety risks.
  • Include steps for cooking, holding, and serving food safely (like using thermometers).
  • Outline what you’ll do if temperatures fall outside safe ranges.

Check with the Food Control section of the Baltimore City Health Department to see if your food operation requires a HACCP plan and get help preparing one.
